There are some points I don't agree with in your post. You said you switched to a 100% plant-based diet and ditched all the animal products. I eat meat and animal fat almost every day and I wake up in the morning with super high energy levels. And that's because I eat a lot of salad too along with intermittent fasting and cutting out carbs. What gave you energy isn't dumping all the meat but increasing vegetables which gives you potassium and all the important minerals. It's rather the combining of animal products WITH sugar and carbs that is unhealthy, that's why its better to eat them separately. Also, drinking a lot of water is also a myth. We don't need that much water, but a much more important factor in staying hydrated are electrolytes: the balanced amount of sodium (which you get mainly from salt) and potassium levels in our body. Too much water can even flush out some of those electrolytes. Coffee makes us dehydrated because it acts like a diuretic and so it depletes some of that salt and potassium but if you're loaded with these, coffee won't be a problem. A small coffee in the morning is very good because all those antioxidants. Sugar and the no or low nutrition foods like bread, pasta also deplete potassium and makes us feel dehydrated. But tea?? We need to be aware of all those studies on nutrition, there are many fake ones like the one that says animal fat is bad or that breakfast is the most important meal of the day, which they publish just so that food companies gain more profit or to reduce the energy on feeding animals.

I do agree with the rest of what you shared. The point on the lymphatic system was quite interesting.
